Job Duties
- develops and monitors budgets
- control financial operation with approved budgets
- monitor and maintain operational costs of unit that include food cost, labor costs and supplies
- monitor and enforce cash handling policies and procedures
- liaise with facilities to ensure repair and maintenance is performed
- direct executive chef in cycle menu planning
- support maintenance, cleaning, fueling and use of university-owned vehicles
- develop schedules, design serving and seating area set-up, and administer and monitor performance requirements
- responsible for payroll of all staff
- maintain appropriate staffing levels to meet business needs
- recruit, hire, train and evaluate staff
- recognize and acknowledge outstanding staff performance
- support and encourage staff development
- approve Cal time within 48 hours of month end
- maintain staff and keep attrition rates low
- lead by example in working a variety of shifts including nights, weekends and holidays
- use university systems such as Cal Answers, Tableau, and UCPath
- enforce, review and interpret safety and sanitation policies and procedures
- audit and ensure compliance of food prep to QA standards and safety/security related to food handling and preparation
- ensure operations are clean, neat and organized
- manage food inventories, vendor deliveries, food preparation, and menu planning while adhering to regulatory guidelines
- develop pars for ordering and minimizing waste
- ensure appropriate use and care of kitchen and food service equipment, facilities, and materials
- maintain SAS notebook with compliance documentation
- assist functional unit as needed
- operate campus vehicle as required
- develop, implement and maintain exceptional customer service standards
