Job Requirements
- Must be able to speak, read, write and understand primary workplace language
- good communication skills both verbal and written
- ability to operate kitchen facilities with minimal supervision
- basic computational and computer skills
- knowledge of accounting programs and budget analysis
- extensive knowledge of menu costing and wage control
- thorough knowledge of food products and standard recipes
- ability to analyze and forecast payroll and production data
- ability to supervise large staff
- ability to conduct safety and staff meetings
- ability to deal with customers with patience and diplomacy
- artistic creativity for menu and display design
- ability to train and develop staff
- ability to enforce kitchen safety protocols including sanitation and PPE
- knowledge of employment and civil rights laws
- physical ability to work in extreme temperatures and perform manual kitchen tasks
- ability to lift up to 50 pounds and handle heavy kitchen equipment
- ability to push/pull carts weighing up to 250 pounds
- must maintain regular attendance
- ability to comply with company rules and work flexible schedules
Job Qualifications
- High school or equivalent education
- minimum two years of culinary schooling preferred
- 2 year culinary degree or Interprovincial Red Seal Certification or higher
- two to three years experience as kitchen manager in high volume kitchen
- knowledge of international and domestic cuisines
- experience managing $3M-$5M annual revenue kitchen
- certification as Executive Chef or Certified Master Chef
- First Aid with CPR & AED certification
- current Food Safe and HACCP certifications
- strong verbal and written communication skills
- leadership and team management abilities
- proficiency in budgetary and menu costing analysis
Job Duties
- Direct the overall food service operation
- enhance food product quality and presentation
- develop new products based on market research and local supplier support
- maintain food quality and consistency
- control profit and loss elements
- set margins and monitor business projections
- support executive management in food and beverage operations
- select, train and develop food and beverage staff
- oversee compliance with employment and civil rights laws
- implement and monitor operational plans
- conduct safety and staff meetings
- communicate effectively with internal and external customers
