Job Requirements
- Must be able to speak, read, write and understand the primary workplace language
- Must have good verbal and written communication skills
- Ability to operate kitchen facilities with minimal supervision
- Basic computational and computer skills required
- Knowledge of computer accounting and budgetary analysis
- Ability to supervise large staff and meet deadlines
- Physical ability to work in extreme temperatures and lift up to 50 pounds
- Must possess cooking, cutting and plate presentation skills
- Must be able to train staff and lead apprenticeship programs
- Ability to uphold safety standards including sanitation, WHMIS and PPE
- Knowledge of employment laws covering civil rights, wage and hour, occupational safety, and employee relations
- Ability to create menus and thematic food displays
- Must be willing to comply with attendance and conduct rules of Permian Lodging LLC
Job Qualifications
- High school diploma or equivalent
- Minimum two years of culinary schooling preferred
- 2-year culinary degree or Interprovincial Red Seal Certification or higher
- Proven knowledge of international and domestic cuisines
- Experience managing kitchen operations with $3M-$5M in annual revenue
- Strong leadership and team management skills
- Ability to analyze data, forecast and control payroll and production
- Proficiency in menu costing, wage and budgetary control
- Certification as Executive Chef or Certified Master Chef
- Valid First Aid with CPR and AED certification
- Current Food Safe and HACCP certifications
Job Duties
- Direct the overall food service operations including preparation, production and control for all food outlets and banquet facilities
- Enhance the food products presented to guests by making market-responsive changes
- Develop new menu items using market research and support local food suppliers
- Maintain the quality and consistency of the food product and delivery standards
- Control profit and loss elements by setting margins and managing business against projections
- Provide specialist support to the Executive Committee and site or corporate managers
- Select, train and develop food and beverage personnel including issuing progressive discipline
- Ensure compliance with federal, state and local employment, civil rights, and safety laws
- Plan work schedules, set targets and monitor productivity and efficiency indicators
- Conduct safety and staff meetings, menu briefings, and maintain effective communication channels
