Job Requirements

  • must be at least 18 years of age
  • conversational communication skills are required
  • minimum 2 years of recent line cook experience including grill and sauté or culinary certificate and 1 year of recent line cook experience including grill and sauté
  • knowledge of variety of kitchen equipment including wood/coal burning grills, broilers, dehydrators, sous vide, vector ovens, blast/recirculating chillers and cryovac
  • proficiency in all stations of the line including grill and sauté as well as proficient skills with knives, tools and kitchen equipment
  • knowledge of modern and classical cooking including sauté, roasting, saucier, braising and measurements
  • knowledge of butchering experience
  • knowledge and understanding of food safety and sanitation guidelines including temperature requirements and HACCP
  • elevated plating techniques
  • advanced product identification and seasonal availability
  • stock and sauce refinement

Job Qualifications

  • minimum 2 years recent line cook experience including grill and sauté or culinary certificate with 1 year recent line cook experience including grill and sauté
  • proficiency with a variety of kitchen equipment
  • knowledge of modern and classical cooking methods
  • familiarity with butchering techniques
  • understanding of food safety and sanitation guidelines including HACCP
  • skilled in elevated plating techniques
  • knowledge of product identification and seasonal availability
  • experience in stock and sauce refinement

Job Duties

  • prepare and recreate Disney recipes
  • modify recipes to accommodate guest dietary restrictions
  • operate a variety of kitchen equipment including wood and coal-burning grills, broilers, dehydrators, sous vide, vector ovens, and cryovac
  • demonstrate proficiency in all line stations including grill and sauté
  • apply advanced knife skills and proper use of kitchen tools
  • utilize modern and classical cooking techniques such as sautéing, roasting, braising, and saucier
  • maintain food safety and sanitation standards following HACCP guidelines
  • practice elevated plating techniques
  • identify products accurately and understand seasonal availability
  • refine stocks and sauces
