Job Requirements
- Education substitution of 2-4 years of progressive work experience typically in food services with acquired knowledge at food services assistant level
- or associate's degree typically in culinary arts with 0-1 year of progressive work experience
- physical ability to lift at least 50 lbs
- ability to remain on feet for long periods
- ability to withstand walking on cement floors regularly
- pass background and reference checks
- drug screening
- compliance with dress code and workplace policies
- no tobacco use on premises
- adherence to Federal Prison Rape Elimination Act (PREA) policies
Job Qualifications
- Knowledge of portion control and high volume cooking
- knowledge of Wyoming health safety and sanitation food service requirements
- prior experience in food services
- ability to train and supervise inmate personnel
- understanding of dietary and medical food preparation
- strong organizational and inventory management skills
- effective communication skills
Job Duties
- Directs, coordinates, prepares, and supervises food preparation for meals within the menu's guidelines, dietary requirements, appearance, taste, temperature, and sanitation standards
- trains workers in safety and sanitation
- prepares all religious and medically necessary diets and substitutions as needed
- directs the portioning and serving of all meals
- oversees the distribution of bulk food and pre-plated meals
- ensures that health guidelines are met in the daily preparation of food
- manages inventory and reviews daily on all items
- completes daily inventories of knives, controlled food items, and tools
- observes and records food, refrigerator, and freezer temperatures
- delivers meals to housing units which may require operating a food truck
