Job Requirements
- High school diploma or equivalent
- Minimum two years of experience managing or supervising subordinate personnel in culinary or food service
- Ability to teach and mentor in a correctional kitchen environment
- Knowledge of food safety laws, regulations, and standards
- Ability to follow safety and security guidelines
- Ability to operate large kitchen equipment
- Moderate physical fitness including lifting up to 50 pounds
- Willingness to work variable shifts including weekends and holidays
- Ability to use computer office equipment and software
Job Qualifications
- Culinary or food service related education or certification
- Minimum two years of supervisory experience in culinary production or food service industry
- Knowledge of OSHA workplace safety standards
- Ability to follow food safety regulations and health laws
- Experience with computer office software including Google Workplace
- Servsafe manager certification or ability to obtain within six months
- Strong verbal and written communication skills
- Leadership experience and ability
- Menu software experience is a plus
- Knowledge of special diets is beneficial
Job Duties
- Operate and teach offender workers to use all major professional culinary kitchen equipment and areas including scullery, bakery, advanced prep/cooking, tray line, cafeteria service, and cold/dry storage
- Collaborate with managers, purchasing staff, vendors, and other agencies to ensure adequate supply of food, materials, and equipment
- Account for delivery of food, supplies, and equipment
- Conduct regular and spot check inventories of food, supplies, or equipment
- Maintain accurate records and logs
- Identify problems and collaborate with stakeholders to implement solutions
- Ensure proper maintenance of all food service equipment and areas
- Organize food service operations for maximum use and efficiency
- Drive non-CDL box truck or other vehicle as needed
