Job Requirements

  • High school diploma or GED
  • Minimum of two years supervisory experience in culinary production kitchen, restaurant, or related food service industry
  • Ability to teach, mentor, and supervise offender workers
  • Knowledge of food safety laws, regulations, and correctional food service standards
  • Compliance with safety and security policies within correctional settings
  • Physical ability to stand for long periods, lift up to 50 pounds, and operate large kitchen equipment
  • Willingness to work a 40 hour full-time schedule with possible overtime
  • Ability to work weekends and holidays as part of scheduled shifts
  • ServSafe manager certification or ability to receive certification within six months

Job Qualifications

  • At least two years of experience managing or supervising personnel in a culinary production kitchen, restaurant, or food service industry
  • High school diploma or GED
  • Culinary or food service education, certification, or training preferred
  • Experience adhering to OSHA workplace safety standards, food safety standards, and health regulations preferred
  • Knowledge of menu development, dietary requirements, and health agency standards preferred
  • ServSafe manager certification or ability to obtain within six months
  • Leadership skills and ability
  • Effective verbal and written communication skills
  • Familiarity with computer and office software including Google Workplace

Job Duties

  • Teach, train, mentor, and supervise medium security and general population offenders in a large professional kitchen
  • Perform, teach, train, and monitor all kitchen operations and production activities
  • Ensure compliance with food safety regulations, laws, and correctional food service standards
  • Adhere to safety and security guidelines, policies, and practices in a correctional environment
  • Collaborate with managers, personnel, purchasing staff, and vendors to maintain adequate supplies
  • Account for delivery of food, supplies, and equipment
  • Conduct inventories and maintain accurate records and logs
  • Identify and resolve problems collaboratively
  • Ensure proper maintenance of food service equipment and areas
  • Organize food service operations for maximum efficiency
  • Drive a non-CDL box truck or another vehicle as needed
