Job Requirements
- Completion of a course of study in professional cooking, food service/dietary management, food technology, culinary arts, food science/nutrition, dietetics, chef's training or closely related area
- One year of lead level experience in food preparation in a custodial/residential institution
- Willingness to work with the resident population of a state correctional facility and comply with institutional regulations
- Ability to supervise and ensure security of inmates/residents
- Adherence to statutes, rules, regulations, policies and procedures governing conduct, interaction with inmates, security, and property protection
- Accountability, flexibility, and problem-solving skills
Job Qualifications
- Certificate from an accredited college, technical or vocational school in professional cooking, food service/dietary management, food technology, culinary arts, food science/nutrition, dietetics, chef's training or related field
- One year of lead level experience in food preparation in a custodial/residential institution
- Experience as a Food Service Lead with the State of Alaska or equivalent
- Knowledge of nutrition and menu planning
- Experience in staff scheduling and food safety
- Experience in purchasing and inventory management in custodial/residential settings
Job Duties
- Oversee all food service operations at the Anchorage Correctional Complex
- Manage budgeting for food services and menu planning
- Enforce sanitation, safety, and security standards in food preparation
- Supervise and schedule kitchen staff
- Oversee inventory, ordering, and supplies management
- Adjust production to maintain nutritional value and meet meal needs
- Provide training and technical guidance to staff cooks
