Job Duties
- Supervise inmate labor and team members in the kitchen during food preparation and service shifts
- prepare, assist, or instruct inmate labor and team members in food preparation according to menus and work instructions
- ensure proper and sanitary food storage
- serve food according to scheduled meal times and department policies
- utilize kitchen utensils and equipment to cook, prepare, and serve food following recipes
- adhere to food safety regulations regarding sanitation, handling, and storage
- train other food service workers
- maintain a clean work environment including cleaning refrigerators, freezers, cooking and serving equipment
- follow facility uniform policies
- manage garbage collection and keep kitchen floors clean
- ensure kitchen readiness for food preparation and serving including sweeping, mopping, and dishwashing
- review proper portion sizes and utensils for service
- promote a healthy and safe work environment for employees and inmates
- perform physical tasks such as lifting, bending, pushing, kneeling, walking, and standing for extended periods
- be prepared to stand for most of the scheduled shift
- perform other related duties as assigned
