Job Requirements
- Must have at least four years of experience in food services
- Must have at least one year of experience as a supervisor
- Must have or obtain food handler's license within 90 days
- Must fulfill state requirements for auxiliary staff
- Must pass background screening
- Must pass drug and alcohol screening
- Must be able to stand for an eight-hour shift
- Must have working knowledge of National School Lunch Program and Child Nutrition Program

Job Duties
- Prepare monthly menus meeting national food allowances and Nutritional School Lunch Program requirements
- Complete daily menu production records and maintain nutritional label files for inspections
- Ensure minimum daily food requirements are met for each meal
- Maintain records and inventory of USDA commodity products and meet with commodity representatives annually
- Forecast annual utilization for commodity items and maintain perpetual inventory
- Meet quarterly with dieticians for menu review and approval
- Order, inventory, monitor, and record all food, supply, and equipment purchases within kitchen budget
- Collect and manage invoices and receipts for monthly accounting
- Develop and monitor standardized recipes for meal preparation
- Monitor and document special diets for medical or religious restrictions
- Conduct daily health, food, sanitary, and safety inspections
- Maintain daily temperature logs for freezers, refrigerators, and kitchen areas
- Prepare meals and snacks for detention staff, residents, sanctions, group home, and alternative school
- Prepare food for special facility events
- Maintain kitchen sanitation and ensure compliance with health standards
- Supervise all kitchen personnel, including scheduling, training, performance evaluations, and disciplinary recommendations
- Incorporate facility security procedures into kitchen operations
- Count and log utensils multiple times per meal
- Perform additional duties as assigned
- Maintain regular attendance and punctuality
