Job Requirements

Job Qualifications

  • High school diploma or equivalent
  • Must be at least 18 years of age
  • Prior institutional food service or restaurant experience preferred

Job Duties

  • Supervise inmate labor and team members in the kitchen during food preparation and food service shifts
  • Prepare, assist, or instruct inmate labor and team members in the preparation of quality foods according to planned menus, recipes, and work instructions
  • Ensure all food is stored properly and in a sanitary manner
  • Serve food during planned meal schedules according to department policies and procedures
  • Utilize kitchen utensils and equipment to cook, prepare, and serve food according to recipes
  • Follow all food safety regulations relating to sanitation, food handling, and storage
  • Train other food service workers
  • Maintain a clean work area including cleaning refrigerators, freezers, cooking and serving equipment
  • Follow facility uniform policy
  • Manage garbage collection and keep kitchen floors clean from food and trash
  • Ensure kitchen environment is ready for food prep and serving including sweeping, mopping, and dishwashing
  • Review proper portions and utensils for service
  • Promote a healthy and safe work environment
  • Perform physical tasks such as lifting, bending, pushing, kneeling, walking, and standing for extended periods
  • Perform other related duties as assigned
