Job Qualifications
- High school diploma or equivalent
- Must be at least 18 years of age
- Prior institutional food service or restaurant experience preferred
Job Duties
- Supervise inmate labor and team members in the kitchen during food preparation and food service shifts
- Prepare, assist, or instruct inmate labor and team members in the preparation of quality foods according to planned menus, recipes, and work instructions
- Ensure all food is stored properly and in a sanitary manner
- Serve food during planned meal schedules according to department policies and procedures
- Utilize kitchen utensils and equipment to cook, prepare, and serve food according to recipes
- Follow all food safety regulations relating to sanitation, food handling, and storage
- Train other food service workers
- Maintain a clean work area including cleaning refrigerators, freezers, cooking and serving equipment
- Follow facility uniform policy
- Manage garbage collection and keep kitchen floors clean from food and trash
- Ensure kitchen environment is ready for food prep and serving including sweeping, mopping, and dishwashing
- Review proper portions and utensils for service
- Promote a healthy and safe work environment
- Perform physical tasks such as lifting, bending, pushing, kneeling, walking, and standing for extended periods
- Perform other related duties as assigned
