Job Qualifications
- High school diploma or equivalent
- At least 18 years of age
- Prior institutional food service or restaurant experience preferred
Job Duties
- Supervise inmate labor and team members in the kitchen during food preparation and food service shifts
- Prepare, assist, or instruct inmate labor and team members in preparing quality foods according to menus and work instructions
- Ensure proper storage and sanitary handling of all food items
- Serve food during planned meal schedules following department policies
- Utilize kitchen utensils and equipment to cook, prepare, and serve food as per recipes
- Follow all food safety regulations regarding sanitation, food handling, and storage
- Train other food service workers
- Maintain a clean work area including refrigeration, cooking, and serving equipment
- Follow facility uniform policy
- Manage garbage collection and maintain clean kitchen floors
- Ensure kitchen environment is ready for food preparation and service including sweeping, mopping, and dishwashing
- Review proper portions and utensils for service
- Promote a healthy and safe work environment for employees and inmates
- Perform physical tasks such as lifting, bending, pushing, kneeling, walking, and standing for extended periods
- Perform other related duties as assigned
