Job Requirements
- Completion of a certificate program in relevant food service or culinary field
- minimum one year of lead-level experience in food preparation within a custodial or residential institution
- understanding of and willingness to work within a correctional facility environment
- ability to adhere to institutional statutes, rules, policies, and procedures
- successful completion of criminal background check and fingerprinting
- legal authorization to work in the United States
- submission of a resume, three professional references, and last three performance evaluations if selected for interview
Job Qualifications
- Certificate from an accredited college, technical or vocational school in professional cooking, food service/dietary management, food technology, culinary arts, food science/nutrition, dietetics, chef's training, or a related area
- one year of lead level experience in food preparation in a custodial/residential institution
- experience as a Food Service Lead with the State of Alaska or equivalent experience
- knowledge of nutrition and menu planning
- staff scheduling skills
- understanding of food safety and handling
- purchasing and inventory management experience in a custodial/residential institution
- ability to work effectively in a secured correctional environment
- strong accountability and analytical thinking skills
- flexibility to adapt to changing conditions and challenges
Job Duties
- Oversee all food service operations at the Anchorage Correctional Complex
- manage budgeting, menu planning, and food production
- enforce sanitation, safety, and security standards
- oversee staff training and scheduling
- manage inventory, ordering, and supplies to meet daily meal needs
- supervise food service operations in East and West Kitchens
- provide technical guidance and support to staff cooks
