Job Requirements
- High school diploma or equivalent
- at least 18 years of age
- ability to stand and be on feet for much of the scheduled shift
- dependable and flexible work attitude
- capable of multitasking and adapting to changes quickly
- physical ability to perform lifting, bending, pushing, kneeling, walking, and standing for extended periods
Job Qualifications
- Prior institutional food service or restaurant experience preferred
- solid understanding of food handling regulations
- passion for food and customer service

- commitment to maintaining a clean and sanitary food service environment
Job Duties
- Supervise inmate labor and team members in the kitchen during food preparation and service shifts
- prepare, assist, or instruct inmate labor and team members in the preparation of quality foods according to menus, recipes, and work instructions
- ensure proper and sanitary storage of all food
- serve food according to planned meal schedules and department policies
- utilize kitchen utensils and equipment to cook, prepare, and serve food in compliance with recipes and nutritional guidelines
- follow all food safety regulations related to sanitation, food handling, and storage
- train other food service workers
- maintain cleanliness of work areas and kitchen equipment including refrigerators, freezers, cooking, and serving equipment
- adhere to facility uniform policy
- manage garbage collection and keep kitchen floors clean from food and trash
- ensure the kitchen environment is ready for food preparation and serving, including sweeping, mopping, and dishwashing
- review proper portions and utensils for service
- promote a healthy and safe work environment for employees and inmates
- perform physical activities such as lifting, bending, pushing, kneeling, walking, and standing for extended periods
- perform other related duties as assigned
