Job Requirements

  • Bachelor’s degree and relevant program experience
  • Four years of experience in a supervisory capacity
  • Two years of experience in quantity and quality cooking if holding a bachelor’s degree
  • Alternatively, associate degree and four years experience or high school diploma with six years experience in quantity and quality cooking
  • Certification in HACCP or ServSafe manager within six months
  • Completion of SCDC basic training within twelve months
  • Completion of basic supervisory course within eighteen months

Job Duties

  • Maintain food service program for 23 institutional cafeterias serving over 15,000 inmates and FS employees
  • Supervise all cafeterias to ensure compliance with DHEC, SCDC food service policies, HACCP and ServSafe standards
  • Accountable for preparation and distribution of over 15 million meals yearly
  • Respond to inquiries from inmates, FS staff and the public concerning the food service program
  • Manage all institutional food service personnel actions including screening applicants, conducting annual evaluations and corrective actions
  • Conduct one-on-one coaching sessions with direct reports at least every other month
  • Make regular on-site visits to institutions for operational assessments and discussions with wardens and managers
  • Participate in design and layout of café renovations or new constructions
  • Supervise USDA school lunch program
  • Travel statewide to various institutions
  • Work from headquarters in Columbia
