Job Requirements

  • A bachelor’s degree and relevant program experience
  • Or an approved equivalency as approved by the Division of State Human Resources
  • Must have four years of experience in a supervisory capacity and a bachelor’s degree and two years’ experience in quantity and quality cooking
  • Or an associate degree and four years’ experience in quantity and quality cooking
  • Or a high school diploma and six years’ experience in quantity and quality cooking
  • Must be certified in hazard analysis and critical control point (HACCP) or SERV safe manager within six months of employment
  • Must be certified by the SCDC training academy or successfully complete SCDC basic training within twelve months of hire
  • Must successfully complete the basic supervisory course within eighteen months of employment

Job Qualifications

  • A bachelor’s degree and relevant program experience
  • Certification in hazard analysis and critical control point (HACCP) or SERV safe manager attained within six months of employment
  • Certification by the SCDC training academy or successful completion of SCDC basic training within twelve months of hire
  • Successful completion of the basic supervisory course within eighteen months of employment
  • Experience in supervisory capacity for at least four years
  • Experience in quantity and quality cooking

Job Duties

  • Under limited supervision from the food service administrator, responsible for the continued maintenance of an established food service program for 23 institutional cafeterias serving 15,000 plus inmates and food service employees
  • Supervise all cafeterias to ensure compliance with all applicable rules, regulations, and policies including DHEC, SCDC food service policies, HACCP and SERV safe
  • Accountable for the preparation and distribution of 15 plus million meals yearly
  • Respond to inmates, food service staff and public inquiries concerning the food service program
  • Responsible for all institutional food service personnel actions including screening applicant selections, annual evaluations and corrective actions
  • Hold one-on-one coaching sessions with all direct reports at least every other month or more often if needed
  • Make regular on-site visits to institutions for operational assessments and discussions with wardens, AWS and/or business managers
  • Actively involved in the design and layout of café renovations or new constructions
  • Supervise the USDA school lunch program
  • Statewide traveling required, headquarters in Columbia
