Job Requirements

  • Associate degree in culinary arts, food management, or similar field
  • Minimum three years supervisory experience in food service environment
  • Experience supervising inmates in institutional food service
  • Ability to plan, coordinate, and direct food service operations
  • Knowledge of sanitation and safety standards
  • Strong organizational and communication skills
  • Ability to maintain effective working relationships with others

Job Qualifications

  • Associate degree in culinary arts, food management, or related field
  • Minimum three years supervisory experience in commercial or institutional food service environment
  • Experience supervising inmates preferred
  • Knowledge of food service organization, operation, and management practices
  • Ability to interpret and prepare special dietary menus
  • Skilled in inventory and budget management
  • Strong interpersonal and leadership skills

Job Duties

  • Plan, coordinate, or direct purchasing, food planning, preparation and serving, inventory, cleaning, and maintenance of sanitary standards in food service areas
  • Prepare work schedules for employees and inmates
  • Review menus and make changes including planning projected menu plans
  • Interpret recipes, modified diet plans and portion control in accordance with approved policy
  • Conduct staff meetings and attend staffing conferences to recommend operational improvements
  • Maintain records and prepare required reports
  • Analyze food costs and assist with departmental budget issues
