Job Requirements
- High school diploma or equivalent
- Prior leadership experience in food service
- Valid Food Service Sanitation Manager (FSSM) certification
- ServSafe certification
- Ability to obtain Certified Food Protection Manager (CFPM) certification within 3 months
- Strong attention to detail
- Ability to work flexible shifts
- Ability to follow safety and sanitation protocols
- Good teamwork and interpersonal skills

Job Duties
- Conduct opening and closing procedures of the main kitchen and cafeteria
- Prepare daily work assignments/work roster
- Monitor work progress and assist when needed
- Meet scheduled start times for tray line and be ready to open cafeteria with all food set-up
- Coordinate tray line cart delivery system based on time schedule
- Supervise catering food preparation and/or set-up and/or delivery
- Assure that catered food is prepared and marked as needed
- Oversee that food sanitation practices are followed by employees and perform coaching and counseling when potential cross contamination is observed
- Order food for the cafeteria timely and in quantity based on volume
- Assure that food is stored/refrigerated in a timely manner
- Order food items from vendors as necessary
- Count, bank, and verify cash with cashier present
- Record cash variances in log or spreadsheet
- Count all food received and verify invoice matches goods delivered
- Practice safe cash handling and ensure safe door remains locked
- Review with dining hosts where room service money is kept and returned to safe
- Record and supervise food distribution to other departments
- Conduct weekly sanitation inspections
- Assure dish machine is cleaned and de-limed as scheduled
- Assure chemicals are labeled and stored properly
- Train employees on cleaning procedures
- Maintain a sanitation score from Peoria Health Department at a PASS
