  • Knowledge of food safety and sanitation standards
  • Ability to follow and enforce kitchen policies and procedures

  • Must pass background investigation and pre-employment drug screening

Job Duties

  • Supervise the activities of inmates in the preparation and serving of meals for population and staff
  • Train inmates in all kitchen policies and procedures
  • Maintain a high standard of food safety, sanitation and quality
  • Manage food service operations in a cost-efficient manner
  • Monitor and repair food service equipment as necessary
  • Ensure compliance with state and institutional food service regulations
  • Coordinate inventory and supply management for the kitchen
