Job Requirements
- Must be 18 years or older
- no felony, theft or stealing convictions
- pass pre-employment drug and alcohol screening
- successfully complete background investigation
- obtain and maintain gaming license
- ability to stand and walk extended periods
- ability to lift and move up to 50 pounds
- flexible to work evenings, weekends, holidays and irregular shifts
- willing to work in high noise, casino environment with exposure to second-hand smoke
Job Qualifications
- Associates degree or equivalent combination of education and experience
- minimum 5 years restaurant and bar industry experience including at least 2 years in management
- knowledge of Title 4 Arizona liquor laws
- management experience at 4 or 5 Diamond award property or high volume restaurant
- knowledge of food and beverage service standards
- knowledge of dining and food maintenance operations
- familiarity with POS systems
- supervisory and training skills
- ability to communicate effectively in English verbally and in writing
- ability to obtain Food Handlers card and TIPS certification
- ability to lift heavy objects
- ability to maintain professional appearance and work under pressure
Job Duties
- Ensure compliance with all Tohono O'odham Gaming Enterprise policies and procedures including internal controls
- uphold all Tribal, City, State and Federal health and food safety codes
- maintain a clean, organized and sanitized work environment
- adhere to Title 4 Arizona liquor laws and TOGE internal controls
- purchase and manage inventory of nonfood and paper supplies
- oversee the opening and closing of restaurants and bars
- manage general operations of kitchens, dining rooms, bars, concessions, and guest services
- hire, fire, schedule and train team members and maintain personnel files
- prepare weekly time sheets
- coordinate sales promotion activities
- manage expenditures to stay within budget
- conduct monthly inventory and report results
- provide training on guest service, food preparation, food sanitation and POS systems
- assist in event operations as needed
- maintain positive communication and professional environment among staff
- analyze guest feedback and survey results to improve service quality
- exemplify Desert Diamond Casino’s culture and service standards
- model company standards and lead by example
