Job Requirements
- Must have associates degree or equivalent combination of education and experience
- Minimum 5 years restaurant and bar industry experience with 2 years in managerial capacity
- Must be 18 years of age or older
- No felony, theft or stealing convictions
- Must successfully pass pre-employment drug/alcohol screen and background check
- Must obtain and maintain a gaming license
- Must have management experience at 4 or 5 Diamond award property or high volume restaurant
- Ability to obtain Food Handlers card
- Ability to obtain TIPS certification
- Ability to communicate effectively in English verbally and in writing
- Ability to supervise staff
- Ability to lift up to 50 pounds
- Ability to work evenings, weekends, holidays, and extended or irregular shifts
- Able to work in a high noise environment with exposure to second-hand smoke
- Must be able to follow instructions and work under stressful conditions
Job Qualifications
- Associates degree plus 5 years restaurant and bar industry experience, including 2 years in a managerial capacity or equivalent combination of education and experience
- Management experience at a 4 or 5 Diamond award property or high volume restaurant business
- Knowledge of food and beverage service standards
- Knowledge of dining and food maintenance operations and guest service
- Knowledge of all menu items including entrees, side dishes, beverages and desserts
- Knowledge of POS systems
- Knowledge of supervisory techniques
- Knowledge of food and beverage administration operations
- Knowledge of bar operations
- Ability to obtain a Food Handlers card
- Ability to obtain TIPS certification
- Ability to communicate effectively in English verbally and in writing
- Ability to supervise assigned staff
- Ability to lift heavy objects repeatedly
- Ability to service guests with professional appearance and manner
- Ability to follow instructions and work in a stressful and busy environment
- Skill in the use of computers, preferably in a PC Windows-based environment
Job Duties
- Ensures compliance with all Tohono O'odham Gaming Enterprise policies and procedures including internal controls
- Knowledge of the laws and regulations governing food and beverage and ensures that all Tribal, City, State and Federal health/food safety codes are upheld
- Responsible for maintaining a clean, organized and sanitized work area while following all relevant health/food safety regulations and codes
- Adheres to all Title 4 (Arizona liquor law) and TOGE internal controls
- Purchases nonfood and paper supplies, stores, rotates, takes inventory and prepares supplies for guests
- Responsible for the opening and closing of the restaurants and bars
- Responsible for the general operation of kitchens, dining rooms, bar, concession and guest service
- Responsible for the hiring, firing, scheduling and training of team members and maintenance of personnel files
- Responsible for weekly time sheets
- Ensures all operations meet health and cleanliness standards at all times
- Coordinates needs of operation with the Senior Food & Beverage Manager
- Plans and prepares work schedules and assigns team members specific duties
- Coordinates sales promotion activities and prepares or directs team members in preparing food and beverages
- Oversees expenditures to ensure the restaurant outlets stay within budget
- Orders merchandise or prepares requisitions to replenish nonfood, beverages and paper goods on hand
- Conducts and reviews monthly inventory, reports inventory results to Senior Food & Beverage Manager
- Conducts training sessions with all team members on guest service, food and beverage preparation, food service and food sanitation principles
- Assists in the operation as needed for all events
- Maintains good communication with team members and maintains a positive and professional work environment
- Contributes to a team effort and accomplishes related results
- Performs other duties as required
- Analyzes member survey results and guest feedback to identify opportunities for improvement and training solutions
