Job Requirements

Job Qualifications
- A degree in hospitality management or culinary degree
- four or more years in a management role in a fine dining establishment or related experience
- sommelier certification from an internationally recognized institution preferred
- exposure to food and beverage standards and management in luxury or international settings preferred
- knowledgeable of HACCP and local food safety standards
- strong proven leadership abilities
- vision for quality and excellence in hotel operations
- knowledge of various operations and POS softwares such as JONAS and TEI
Job Duties
- Manage and uphold Discovery Land Company Sequence of Service for all food and beverage outlets
- ensure food and beverage outlets are maintained, operated, and monitored throughout the day
- collaborate with culinary and F&B leadership to analyze menus, prices, and product offerings for profitability
- work with Catering and Events Manager on event coordination
- organize restaurant outlets and prepare for daily covers and events
- optimize seating capacity by monitoring reservations and allocating tables
- maintain and update guest profiles daily
- provide assistance in managing restaurants through observance and teamwork, ensuring floor presence and communication
- address member or guest issues professionally, courteously, and promptly
- establish service procedures and training for fast, courteous, and efficient service
- promote up-selling to maximize average spend per cover
- ensure cleaning schedules, temperature records, and checklists are completed daily
- maintain all equipment and ensure proper handling by staff
- comply with all government, safety, health, and security standards
- recruit, train, and supervise food and beverage staff
- create and implement training and development programs
- schedule staff to ensure adequate coverage and labor budget monitoring
- conduct/attend daily briefings and provide feedback
- address employee concerns in a timely manner
- recommend promotions and disciplinary actions
- prepare annual capital and operational budgets
- monitor inventory levels and control pilferage and breakage
- perform additional duties as assigned by management
