Job Requirements

Job Qualifications
- Degree in hospitality management or culinary degree
- Four or more years in a management role in a fine dining or related establishment
- Sommelier certification preferred
- Experience with food and beverage standards and management in luxury or international settings preferred
- Knowledge of HACCP and local food safety standards
- Proven leadership abilities in hotel operations
- Experience with various operations and POS software such as JONAS and TEI
Job Duties
- Uphold Discovery Land Company sequence of service for all F&B outlets
- Ensure food and beverage outlet is maintained, operated, and monitored throughout the day
- Collaborate with culinary and F&B leadership to analyze menus, prices, and product offerings for profitability
- Work with Catering and Events Manager on event coordination
- Organize restaurant operations to handle daily covers and events efficiently
- Optimize seating capacity by monitoring reservations and allocating tables professionally
- Maintain and update guest profiles daily
- Manage restaurant through observation, teamwork, and floor presence
- Address member or guest issues promptly and professionally
- Establish procedures and training for fast, courteous, and efficient service
- Train staff on upselling to maximize average spend per cover
- Ensure daily completion of cleaning schedules, temperature records, and checklists
- Maintain equipment and ensure proper handling by staff
- Comply with government, safety, health, and security standards
- Recruit, train, and supervise F&B staff
- Develop training programs, departmental goals, and objectives
- Manage staff scheduling, punctuality, and labor budget
- Conduct daily briefings and provide feedback
- Handle employee concerns and challenges timely
- Ensure attendance and delivery of behavioral and vocational training
- Recommend promotions and disciplinary actions
- Ensure cost effectiveness of materials and staff to maximize profitability
- Prepare annual capital and operational budgets for F&B service
- Monitor inventory levels and costs
- Control pilferage and breakage to reduce costs
- Perform other duties as required by management
