Job Requirements
- Degree in culinary arts preferred
- 3 to 5 years experience in food production or management
- Serve Safe certification or ability to obtain within 90 days
- Basic knowledge of food preparation procedures
- Knowledge of dining room service etiquette
- Familiarity with health department regulations
- Basic computer skills including Microsoft Office and internet usage
- Strong organizational skills
- Good oral and written communication skills
- Self-motivated with ability to work independently
- Physical ability to bend, reach, push, pull, lift up to 50 pounds, and stand for long periods
- Ability to work in hot or humid conditions
- Ability to assess food quality by taste and smell
Job Qualifications

Job Duties
- Responsible for the overall financial and operational functions related to dining room service and culinary operations
- Creates and plans weekly menus for the independent living communities and follows dietitian-approved menus for assisted living and memory care communities
- Ensures compliance with federal, state, and local sanitation regulations
- Maintains cleanliness and sanitation of all work areas
- Conducts routine safety and sanitation inspections using self-inspection documents and communicates action items to management
- Demonstrates attention to detail with regard to food quality, presentation, and dining room environmental standards
- Develops and maintains food service quality, objectives, and standards
- Prepares all monthly food service reports
- Maintains food and supply expenses to budget or forecast
- Places orders for food and supplies through authorized vendors
- Completes physical food and supply inventories prior to placing orders
- Plans, develops, organizes, implements, evaluates, and directs food and beverage operations
- Makes written and oral reports to the Executive Director concerning the food service department operations
- Maintains daily logs of freezer, refrigeration, dishwasher, and food holding temperatures
- Assures kitchen cleanliness and safety
- Supports community sales efforts with catering services for marketing events and private resident affairs
- Follows all emergency procedures and safety policies
- Ensures a 72-hour emergency food, water, and disposable supply
- Exhibits enthusiasm for working with seniors and promotes community values
- Maintains confidentiality of resident care information
- Manages departmental staffing and labor costs including overtime
- Recruits, orients, trains, and evaluates culinary services staff
- Assures dining room service provider meets contract responsibilities
- Oversees culinary services calendar for holidays and special events
- Performs other duties as necessary and appropriate
