Job Requirements
- High school diploma or GED or equivalent
- Must obtain California Food Handler Certification within 30 days of hire and maintain recertification every 3 years
- Valid driver’s license essential to drive College-owned vehicles
- Must pass a functional capacity test after job offer and prior to hire
- Ability to handle physical demands including lifting up to 50 pounds and standing for long periods
- Must report to work on time and in uniform at the start of each shift
- Willingness to work a flexible, variable schedule including overtime, holidays, weekends, and evenings
- Understand and follow kitchen safety and sanitation protocols
- Ability to communicate clearly and follow instructions
- Must join labor union upon hire
Job Qualifications
- Any combination of education, training and/or experience equivalent to high school diploma or GED that provides required knowledge, skills and ability
- Must take and successfully pass the California Food Handler Certification within 30 days of hire and recertify every 3 years
- Experience in food production assignments and staff supervision in a kitchen at an academic institution preferred
- Ability to create, read and follow numerous recipes
- Experience training staff in food prep and production
- Ability to operate and oversee a variety of kitchen equipment and appliances
- Strong verbal, written, interpersonal, and customer service skills
- Ability to handle tasks with patience, discretion, good judgment, and tact
- Strong organizational, time management, problem solving, and basic math skills
- Ability to lift and move supplies weighing up to 50 pounds and stand for long periods
- Willingness to work a flexible schedule including evenings, weekends, and holidays
Job Duties
- Prepare customer meal requests using the "Cook to Order" cooking system primarily at the grill services, exhibition, and pizza areas of assigned dining halls
- Serve as a prep and helper cook in the kitchen and service areas as needed
- Read and follow numerous recipes
- Prepare, season, marinate, cook, taste, carve, and serve soups, meats, vegetables, and desserts
- Cook, measure, mix, wash, peel, cut, or shred meats, fruits, vegetables and other ingredients
- Trim and cut meats, poultry, and fish
- Assist with catering production as assigned
- Ensure kitchen safety and sanitation compliance
- Clean and sanitize work and service areas before and after meal periods
- Incorporate HACCP and PPE procedures in all kitchen production areas
- Take and record temperatures to ensure health department compliance
- Keep production records for all food produced
- Use "Just in Time" and "Batch" cooking to ensure freshness
- Minimize leftover and excess food production and use leftovers to decrease waste
- Label, date, and store food items appropriately
- Set up and maintain food service lines and steam tables
- Provide excellent customer service to students, faculty, staff, and external customers
- Participate in training sessions provided by the College
- Perform special projects and assist with other duties as assigned
