Job Requirements

- must be 18+ years old
- food sanitation safety certification within 90 days or certified food protection manager certification within 90 days (required for Minnesota locations)

- vocational school or technical training or associate degree in food service (preferred)

Job Duties
- Maintains float schedule and supports on-site dining staff
- fills in for chef vacancies at various Ebenezer locations
- conducts regular site kitchen inspections to ensure compliance with health and sanitation
- mentors chefs
- provides training to chefs
- assists with special events
- assists with planning menus
- provides technical support related to Point, Click, Care
- assists with interviews for site staff
- assists with health inspections
- properly cooks foods to specified temperatures
- ensures products meet temperature and quality standards
- follows standardized recipes and products to ensure consistency in quality and nutritional value
- weighs and measures ingredients per standardized recipes
- uses correct portioning utensils
- assembles food within specified time frames
- ensures production and meal service are timely
- prepares bakery items per standardized recipes
- accurately completes tasks listed on daily preparation sheets
- properly handles and prepares texturized diets utilizing IDDSI standards
- handles and prepares food safely following infection control and safety protocols
- takes and documents food temperatures and adjusts as necessary
- follows established hand washing procedures
- wears gloves when preparing and serving food
- follows department dress and personal hygiene codes
- follows employee health guidelines to prevent disease transmission
- covers and labels food with content and date
- sanitizes equipment and work area after each use
- maintains a clean work area
- cleans and sanitizes equipment per routine schedule
- uses appropriate equipment and chemicals
- maintains separate clean and dirty work areas
- scrubs pots/pans in the 3-compartment sink
- supervises kitchen staff
- responsible for daily operations and customer service in supervisor's absence
- communicates feedback from residents and guests regarding food quality and service
