Job Requirements
- High school diploma or GED certification
- two years food preparation experience in a restaurant or food service capacity including one year supervisory experience
- successful completion of New Mexico Food Handlers course
- ability to pass a stringent background investigation
- ability to pass pre-employment and random drug screenings
- willingness to work flexible schedule including weekends and holidays
- ability to lift up to 50 pounds
- punctual and regular attendance according to attendance policy
- physical ability to perform job-related activities such as crouching, kneeling, lifting, pulling, pushing, reaching, and standing for long periods
- capability to work indoors and outdoors in various weather conditions
- adherence to safety and sanitary standards
Job Qualifications
- High school diploma or GED certification
- minimum of two years food preparation experience in a restaurant or food service capacity
- at least one year supervisory experience
- knowledge of culinary techniques and food preparation methods
- ability to create high-quality banquet dishes

Job Duties
- Assist the Sous Chef/Banquet Chef with training of line cooks
- prepare weekly work schedules and daily break schedules for pantry staff
- develop daily food production schedules according to cover forecast
- assign work tasks and ensure kitchen recipes are followed
- prepare storeroom requisitions to maintain par levels
- ensure kitchen staff works in a sanitary, safe, and productive manner
- oversee adherence to standard recipes and plating instructions
- prepare quality food timely for appetizers, salads, soups, sauces, entrée items, vegetables
- ensure all food on the service line meets standards for preparation, taste, and presentation
- supervise food preparation processes to maintain consistency and quality
- promote cooperation between kitchen employees and restaurant service staff to ensure best guest service
- maintain clean and orderly kitchen workstations and storage areas
- assign daily cleaning tasks
- report necessary equipment repairs and ensure timely completion
- maintain proper temperature requirements and complete temperature logs
- enforce personnel sanitation standards
- investigate and resolve customer complaints about food quality and service
- open and close kitchen as needed
- apply knowledge of safe food handling temperatures
- enforce use of safety gloves and latex gloves during food preparation
- control food production to avoid waste
- perform additional assigned duties
- ensure punctual and regular attendance following the Pueblo of Sandia attendance policy
