Job Requirements

  • Must successfully complete the New Mexico Food Handlers course
  • Must be able to pass a stringent background investigation
  • Will require pre-employment and random drug screening
  • Must have a high school diploma, GED or equivalent
  • Minimum two years food preparation experience including one year supervisory experience
  • Ability to work flexible schedule including weekends and holidays
  • Ability to lift up to 50 pounds
  • Ability to stand and walk for prolonged periods
  • Strong interpersonal and team collaboration skills
  • Commitment to punctual and regular attendance
  • Knowledge of tribal, federal, state, and local sanitary regulations
  • Ability to work indoors and outdoors under varying weather conditions

Job Qualifications

  • High school diploma or GED certification
  • Two years of food preparation experience in a restaurant or food service capacity
  • One year of supervisory experience
  • Knowledge of culinary techniques and food preparation methods
  • Skills in banquet menu development and dietary accommodations
  • Ability to lead and motivate kitchen staff
  • Strong organizational and communication skills
  • Ability to supervise cooks and kitchen employees
  • Familiarity with safe food handling and sanitation regulations
  • Ability to manage buffet line operations
  • Knowledge of purchasing regulations desirable
  • Ability to write reports and prepare documents
  • Flexibility to work in fast-paced and dynamic environment

Job Duties

  • Assist the Sous Chef/Banquet Chef with training of line cooks
  • Prepare weekly work schedules and daily break schedules for pantry staff
  • Ensure kitchen recipes are followed for quality food preparation and storeroom requisition for par levels
  • Supervise timely preparation of appetizers, salads, soups, sauces, entrée items, and vegetables
  • Maintain clean and orderly kitchen workstations and storage areas
  • Assign daily cleaning tasks to kitchen staff
  • Oversee food preparation processes for consistency, quality, and adherence to standards
  • Address and resolve guest complaints regarding food quality and service
  • Ensure proper food safety measures including temperature control and personnel sanitation
  • Open and close kitchen as necessary
  • Promote cooperation between kitchen and service staff
  • Perform additional duties as assigned
  • Maintain punctual and regular attendance in accordance with attendance policy
