Job Requirements
- Must successfully complete the New Mexico Food Handlers course
- Must be able to pass a stringent background investigation
- Will require pre-employment and random drug screening
- Must have a high school diploma, GED or equivalent
- Minimum two years food preparation experience including one year supervisory experience
- Ability to work flexible schedule including weekends and holidays
- Ability to lift up to 50 pounds
- Ability to stand and walk for prolonged periods
- Strong interpersonal and team collaboration skills
- Commitment to punctual and regular attendance
- Knowledge of tribal, federal, state, and local sanitary regulations
- Ability to work indoors and outdoors under varying weather conditions
Job Qualifications
- High school diploma or GED certification
- Two years of food preparation experience in a restaurant or food service capacity
- One year of supervisory experience
- Knowledge of culinary techniques and food preparation methods
- Skills in banquet menu development and dietary accommodations
- Ability to lead and motivate kitchen staff
- Strong organizational and communication skills
- Ability to supervise cooks and kitchen employees
- Familiarity with safe food handling and sanitation regulations
- Ability to manage buffet line operations
- Knowledge of purchasing regulations desirable
- Ability to write reports and prepare documents
- Flexibility to work in fast-paced and dynamic environment
Job Duties
- Assist the Sous Chef/Banquet Chef with training of line cooks
- Prepare weekly work schedules and daily break schedules for pantry staff
- Ensure kitchen recipes are followed for quality food preparation and storeroom requisition for par levels
- Supervise timely preparation of appetizers, salads, soups, sauces, entrée items, and vegetables
- Maintain clean and orderly kitchen workstations and storage areas
- Assign daily cleaning tasks to kitchen staff
- Oversee food preparation processes for consistency, quality, and adherence to standards
- Address and resolve guest complaints regarding food quality and service
- Ensure proper food safety measures including temperature control and personnel sanitation
- Open and close kitchen as necessary
- Promote cooperation between kitchen and service staff
- Perform additional duties as assigned
- Maintain punctual and regular attendance in accordance with attendance policy
