Job Requirements
- High school diploma or GED
- Two years of food preparation experience including one year of supervisory experience
- Must complete New Mexico Food Handlers course
- Successful background investigation
- Pre-employment and random drug screening
- Ability to lift up to 50lbs
- Availability to work flexible schedule including weekends and holidays
- Punctual and reliable attendance
- Ability to perform physical activities including crouching, bending, feeling, finger dexterity, grasping, hearing, kneeling, lifting, pulling, pushing, reaching, seeing, walking, standing, stooping, talking
- Willingness to work indoors and outdoors in various weather conditions
- Ability to follow safety and sanitation protocols
Job Qualifications
- High school diploma or equivalent
- Two years of food preparation experience in a restaurant or food service including one year supervisory experience
- Knowledge of culinary techniques and food preparation methods
- Ability to develop diverse banquet menus considering dietary preferences
- Strong leadership and team motivation skills
- Excellent organizational skills for event coordination
- Effective verbal and written communication skills
- Ability to supervise and direct kitchen staff
- Sound personnel management practices
- Flexibility to work in a fast-paced environment
- Ability to write and prepare standard reports and documents
- Knowledge of buffet line operations
- Knowledge of food/drink preservation temperature requirements
- Understanding of Tribal, Federal, State, and local sanitary regulations
- Knowledge of casino purchasing regulations desirable
Job Duties
- Assist the Sous Chef/Banquet Chef with training line cooks
- Prepare weekly work schedules and daily break schedules for pantry staff
- Plan daily food production schedules conforming to cover forecasts
- Ensure kitchen recipes and plating instructions are followed
- Maintain storeroom requisitions and par levels
- Ensure kitchen staff works in a sanitary, safe, and productive manner
- Oversee food preparation to maintain consistency, quality and adherence to standards
- Ensure food leaving the service line meets preparation, taste, and presentation standards
- Foster cooperation between kitchen and service staff for optimal guest service
- Maintain cleanliness and order of kitchen workstations and storage areas
- Assign daily cleaning tasks to kitchen staff
- Advise Sous Chef/Banquet Chef on necessary equipment repairs and follow up
- Ensure proper temperature control and complete temperature logs
- Enforce high personnel sanitation standards
- Investigate and resolve customer complaints about food quality and service
- Open and close the kitchen as needed
- Ensure correct food quantities to prevent waste
- Wear safety gloves and latex food preparation gloves as appropriate
- Perform additional duties as assigned
- Maintain punctual and regular attendance
- Build professional relationships and support a collaborative work environment
- Promote a culture of mutual respect, honesty, and integrity
