Job Requirements
- High school diploma, GED certification or equivalent
- Two years food preparation experience in a restaurant or food service capacity including one year supervisory experience
- Must successfully complete the New Mexico Food Handlers course
- Must be able to pass a stringent background investigation
- Will require a pre-employment and random drug screening
- Must be able to lift 50lbs
- Must work flexible schedule including weekends and holidays
- Work hours subject to change with overtime required
- Ability to work both indoors and outdoors including exposure to extreme temperatures and weather
- Ability to comply with safety standards including use of gloves
- Must have punctual and regular attendance
- Ability to perform physical activities such as crouching, bending, feeling, grasping, kneeling, lifting, pulling, pushing, reaching, seeing, walking, standing, stooping, and talking
- Ability to work in fast-paced, noisy environments with potential hazards
- Ability to adapt to various work surfaces and conditions
Job Qualifications
- High school diploma, GED certification, or equivalent
- Two years food preparation experience in a restaurant or food service including one year supervisory experience
- Knowledge of culinary techniques and food preparation methods
- Skills in developing banquet menus and accommodating dietary preferences
- Ability to lead, motivate, and delegate tasks effectively
- Strong organizational and communication skills
- Ability to supervise kitchen staff and exercise sound personnel management
- Flexibility to work in dynamic environments with changing priorities
- Ability to prepare reports and documents
- Knowledge of buffet line operations
- Understanding of food and drink preservation temperature requirements
- Familiarity with tribal, federal, state and local sanitary regulations
- Knowledge of casino purchasing requirements desirable
Job Duties
- Assist the Sous Chef/Banquet Chef with training line cooks
- Prepare weekly work schedules and daily break schedules
- Ensure kitchen recipes and food preparation standards are followed
- Maintain par levels by preparing storeroom requisitions
- Assure kitchen staff work in a safe and sanitary manner
- Oversee food preparation to ensure quality, consistency, and presentation
- Cooperate with restaurant service employees to ensure excellent guest service
- Maintain cleanliness of kitchen workstations and storage areas
- Assign daily cleaning tasks to kitchen staff
- Advise on equipment repairs and ensure timely follow-up
- Monitor and maintain proper food temperature logs
- Enforce personal sanitation standards among personnel
- Investigate and resolve customer complaints and inform Sous Chef/Banquet Chef
- Responsible for opening and closing the kitchen
- Ensure safe handling and proper use of safety gloves and latex gloves
- Control food production to prevent waste
- Perform additional assigned duties
- Maintain punctual and regular attendance
- Build professional relationships among team members
- Promote a culture of mutual respect, honesty, and integrity
