Job Requirements
- High school diploma, GED certification or equivalent
- Two years food preparation experience in a restaurant or food service capacity including one year supervisory experience
- Must successfully complete the New Mexico Food Handlers course
- Must be able to pass a stringent background investigation
- Will require a pre-employment and random drug screening
- Ability to lift 50lbs
- Willingness to work flexible schedules including weekends and holidays
- Ability to work indoors and outdoors in various weather conditions
- Compliance with attendance policy
- Ability to perform physical activities including crouching, bending, feeling, finger dexterity, grasping, hearing, kneeling, lifting, pulling, pushing, reaching, seeing, walking, standing, stooping, and talking under specified conditions
Job Qualifications
- High School Diploma, GED certification or equivalent
- Minimum two years of food preparation experience in a restaurant or food service capacity
- At least one year of supervisory experience
- Knowledge of culinary techniques and food preparation methods
- Skills in developing diverse banquet menus and understanding dietary preferences
- Ability to lead, motivate, and delegate tasks to kitchen staff
- Strong organizational and communication skills
- Ability to supervise and direct cooks and kitchen employees
- Knowledge of buffet line operations and food safety temperature requirements
- Familiarity with Tribal, Federal, State, and local sanitary regulations
- Ability to write and prepare standard reports and documents
- Flexibility to work in a fast-paced environment with changing priorities
Job Duties
- Assist the Sous Chef or Banquet Chef with training line cooks
- Prepare weekly work schedules and daily break schedules for pantry staff
- Ensure kitchen recipes are followed and food preparation meets quality standards
- Maintain sanitary, safe, and productive kitchen operations
- Oversee food preparation for appetizers, salads, soups, sauces, entrée items, and vegetables
- Monitor food display and plating to maintain presentation and taste
- Coordinate cooperation between kitchen and restaurant service staff
- Maintain clean and orderly kitchen workstations and storage areas
- Assign daily cleaning tasks to kitchen staff
- Advise Sous Chef or Banquet Chef on equipment repairs and ensure timely maintenance
- Ensure proper temperature requirements are maintained and logs completed
- Enforce personnel personal sanitation standards
- Investigate and resolve customer guest complaints about food quality and service
- Responsible for opening and closing the kitchen as needed
- Ensure safety gloves and latex gloves are worn when appropriate
- Control food production to prevent overproduction and waste
- Perform additional duties as necessary
- Maintain punctual and regular attendance in accordance with policy
