Job Requirements

  • High school diploma, GED certification or equivalent
  • Minimum two years food preparation experience
  • At least one year supervisory experience
  • Must complete New Mexico Food Handlers course
  • Must pass a stringent background investigation
  • Must pass pre-employment and random drug screenings
  • Ability to work flexible schedule including weekends and holidays
  • Able to lift 50 pounds
  • Must maintain punctual and regular attendance
  • Willingness to adhere to safety and sanitary standards
  • Ability to work indoors and outdoors under various weather conditions
  • Flexibility to work overtime when required

Job Qualifications

  • High school diploma, GED certification or equivalent
  • Two years of food preparation experience in restaurant or food service, including one year supervisory experience
  • Knowledge of culinary techniques and food preparation methods
  • Ability to develop diverse and customizable banquet menus
  • Strong leadership and team motivation skills
  • Excellent organizational skills for event coordination
  • Strong verbal and written communication skills
  • Ability to supervise and direct kitchen staff
  • Sound personnel management practices
  • Ability to adapt to fast-paced and dynamic work environments
  • Ability to write and prepare standard reports
  • Knowledge of buffet line operations
  • Familiarity with food and drink temperature preservation
  • Understanding of casino purchasing regulations desirable
  • Knowledge of tribal, federal, state, and local sanitary regulations

Job Duties

  • Assist the Sous Chef/Banquet Chef with training line cooks
  • Prepare weekly work schedules and daily break schedules for kitchen staff
  • Ensure kitchen recipes and plating instructions are followed
  • Manage daily food production schedule conforming to cover forecast
  • Maintain storeroom requisitions and par levels
  • Oversee food preparation for quality, taste, and presentation
  • Ensure cleanliness and order of kitchen workstations and storage areas
  • Assign daily cleaning tasks to kitchen staff
  • Advise Sous Chef/Banquet Chef about equipment repairs and follow up
  • Ensure proper temperature requirements are maintained and logs completed
  • Maintain highest standards of personnel sanitation
  • Investigate and resolve customer complaints about food quality and service
  • Responsible for opening and closing the kitchen as necessary
  • Ensure use of safety gloves and food preparation gloves as appropriate
  • Control food preparation quantity to minimize waste
  • Perform additional assigned duties
  • Maintain punctual and regular attendance in accordance with Pueblo of Sandia attendance policy
  • Build professional relationships with team members and support collaborative work environment
  • Cooperate with team members promoting mutual respect, honesty, and integrity
