Job Requirements

  • High school diploma, GED certification or equivalent
  • Two years food preparation experience in a restaurant or food service capacity including one year of supervisory experience
  • Must complete New Mexico Food Handlers course
  • Must pass stringent background investigation
  • Must pass pre-employment and random drug screening
  • Ability to lift 50 pounds
  • Must be punctual and adhere to assigned schedules
  • Flexibility to work weekends and holidays
  • Ability to work in indoor and outdoor environments
  • Must adhere to safety and sanitation protocols

Job Qualifications

  • High school diploma or GED
  • Two years of food preparation experience including one year supervisory experience
  • Knowledge of culinary techniques and food preparation methods
  • Skills in banquet menu development and dietary preferences
  • Ability to lead, motivate, and delegate tasks effectively
  • Strong organizational and communication skills
  • Ability to supervise kitchen staff
  • Knowledge of buffet line operations
  • Knowledge of food safety and sanitation regulations
  • Ability to write and prepare standard reports and documents
  • Knowledge of Casino purchasing requirements is desirable

Job Duties

  • Assist Sous Chef/Banquet Chef with training line cooks
  • Prepare weekly work schedules and daily break schedules
  • Ensure kitchen recipes are followed and food production schedule is met
  • Maintain clean and orderly kitchen workstations and storage areas
  • Assign daily cleaning tasks to kitchen staff
  • Monitor food preparation quality, taste, and presentation
  • Investigate and resolve guest complaints about food quality and service
  • Advise Sous Chef/Banquet Chef on necessary equipment repairs
  • Ensure proper temperature logs are completed and maintained
  • Enforce use of safety and food preparation gloves
  • Responsible for opening and closing kitchen operations
  • Perform additional duties as assigned
  • Maintain punctual and regular attendance
