Job Requirements
- Bachelor's degree in hospitality or related field preferred
- Minimum of 5 years experience in food and beverage management
- Experience in casino or hotel food and beverage operations preferred
- Knowledge of food handling and safety certification requirements
- Proven leadership and staff development skills
- Strong budgeting and financial management abilities
- Excellent verbal and written communication skills
- Ability to work flexible hours including nights, weekends, and holidays
- Proficiency in POS and inventory management software
- Ability to manage multiple priorities in a fast-paced environment

Job Duties
- Participates in the development and implementation of business strategies aligned with the overall mission and values
- Develops and implements strategies for achieving F&B goals supporting property objectives
- Monitors status regularly and adjusts strategies as needed
- Participates in annual budget development with department managers
- Develops quarterly F&B marketing plans and strategies
- Maximizes profitability and revenue by directing F&B operations
- Controls costs through operational standards for forecasting, budgeting, scheduling, and payroll
- Audits and maintains food handling and safety certifications
- Responds promptly to food safety inspections and reports
- Oversees monthly inventories and maintains optimum stock levels
- Develops menu offerings and pricing based on market analysis
- Inspects cleanliness, maintenance, and safety adherence in F&B areas per OSHA guidelines
- Ensures all outlets meet directed standards
- Reviews and addresses guest complaints appropriately
- Supports catering sales by managing communications, clarifying requirements, and preparing proposals
- Negotiates catering sales functions and conducts on-site client inspections
- Follows up on customer satisfaction for catering events
- Ensures all materials comply with company standards
- Develops team member engagement strategies including recruitment, orientation, training, and coaching
- Drives performance expectations and feedback
- Establishes vendor relationships and negotiates pricing
- Participates in vendor fairs and food tastings
- Assists with vendor invoice disputes
- Communicates effectively with guests, management, and team members
- Coordinates with marketing and operational teams
- Reports on F&B revenue, costs, and KPIs regularly
- Supervises hourly team members and contract staff
- Makes important decisions impacting guest service and business
- Implements effective training programs
- Manages staffing, scheduling, and payroll for FOH and BOH
- Investigates and resolves guest complaints
