Job Requirements

  • Two year degree or higher in relevant field
  • Minimum five years experience in food and beverage industry
  • Minimum three years restaurant management experience
  • Catering or banquet experience required
  • Ability to obtain and maintain gaming license
  • Strong communication skills
  • Proven leadership ability
  • Ability to pass pre-employment drug test and background check
  • Physical ability to perform duties including walking, bending, and standing
  • Ability to work in a non-smoking environment
  • Knowledge of OSHA and health standards
  • Proficiency with POS systems
  • Must be available for full-time employment

Job Qualifications

  • Must have five years of experience in the F&B industry including three years in restaurant management and catering or banquet experience
  • Bachelor's degree in Restaurant Management or related field or equivalent combination of education and experience
  • Ability to identify strategic issues and develop effective programs
  • Working knowledge of profit and loss statements
  • Excellent customer service skills
  • Ability to obtain and retain a gaming license through the Cahuilla Tribal Gaming Agency
  • Ability to represent the gaming enterprise in public venues
  • Demonstrated leadership, organizational and strategic agility
  • Strong managerial problem-solving and critical thinking skills
  • Effective oral and written communication skills
  • Ability to prioritize issues and drive measurable results
  • Ability to delegate and coordinate activities efficiently
  • Skilled in team member development, motivation, coaching, feedback, and accountability
  • Ability to interact successfully with public, team members, management, tribal enterprises, and government agencies
  • Knowledge of POS systems with Agilysys POS preferred

Job Duties

  • Participates in the development and implementation of F&B business strategies aligned with the casino's mission
  • Develops and manages annual budget and quarterly marketing plans
  • Monitors and adjusts strategies to meet F&B goals
  • Maximizes profitability by directing F&B operations including cost control and inventory management
  • Ensures food safety compliance and staff certification maintenance
  • Oversees menu development and pricing based on market trends and competition
  • Manages cleanliness, safety, and OSHA compliance in all F&B areas
  • Responds to guest complaints and monitors satisfaction
  • Coordinates catering sales and event proposals including client communication and contract negotiation
  • Recruits, trains, and evaluates team members to ensure performance and engagement
  • Collaborates with warehouse, buyers, and vendors to maintain food quality and negotiate pricing
  • Communicates effectively with guests, management, and marketing teams
  • Supervises FOH and BOH staff, scheduling, payroll, and inventory management
  • Leads staff development, training programs, and succession planning
  • Ensures health, sanitation, and safety standards are consistently met
  • Maintains POS and liquor inventory systems
  • Acts as visible leader and mentor on the floor
  • Performs additional duties as assigned by senior management
