Job Requirements

  • Education in culinary arts or related field preferred
  • Minimum 5 years of experience as a sushi chef in fine dining or luxury restaurant settings
  • Proven leadership experience managing a team of sushi chefs
  • Ability to work flexible hours including evenings, weekends, and holidays
  • Strong attention to detail and passion for culinary excellence
  • Physical ability to stand for extended periods and work in a fast-paced kitchen environment
  • Must be able to adhere to strict food safety and sanitation standards
  • Excellent interpersonal skills and customer service orientation

  • Proven track record of working in high-end Japanese or sushi restaurants

Job Duties

  • Lead the sushi bar by preparing and presenting world-class sushi using the finest ingredients and traditional techniques
  • Curate and design a seasonal sushi menu that incorporates both traditional Japanese techniques and innovative creations
  • Focus on perfecting the art of sushi, from rice preparation to fish selection, cutting, and plating
  • Supervise and guide the sushi kitchen team, training staff on sushi techniques, kitchen protocols, and maintaining consistency in the quality of sushi and other Japanese dishes
  • Ensure that every sushi dish meets the restaurant's high standards of taste, quality, and presentation
  • Maintain consistency in sushi preparation and portioning, while adapting to guest preferences
  • Source the finest, freshest ingredients, including premium fish, vegetables, and other sushi essentials
  • Manage inventory and work with suppliers to ensure the best quality products are available
  • Oversee daily kitchen operations, ensuring that all sushi bar and kitchen activities run smoothly
  • Manage time effectively during peak service hours and work collaboratively with the kitchen and front-of-house staff
  • Maintain a presence at the sushi bar, interact with guests when appropriate, and ensure that they are experiencing the artistry and craft of sushi at its finest
  • Adhere to and enforce all food safety and sanitation guidelines in the kitchen
  • Maintain a clean and organized work environment at all times
