Job Qualifications
- Five plus years of sushi chef management experience at high-end level restaurants or comparable establishment
- Fine dining or Michelin experience required
- Strong written and verbal communication skills for effective staff information relay
- Passion and dedication to food, beverage, and hospitality
- Polished, professional, and energetic management approach
- Ability to support, lead, and motivate staff
- Attention to detail and commitment to quality
Job Duties
- Accomplish company goals by owning assigned tasks and exploring opportunities to add value to the position
- Oversee and participate in daily food purchasing and prep production
- maintain proper inventory practices and reporting
- Lead menu development by maintaining and updating recipe builds, developing seasonal menu changes, and creating new weekly specials
- Schedule and manage the chef brigade and hourly staff, recruit and train exceptional hourly staff members
- Manage financial oversight including daily operational management of team members, product, COGS, and financials
- Maintain safety and compliance standards by enforcing sanitation practices and collaborating with Human Resources
- Develop and communicate Maple Hospitality Group culture, focusing on hospitality goals and generosity
- Report operational wins, losses and areas for improvement to Executive Chef or CDC
- Manage and implement the fish butchery program with high-quality sourcing and sanitation standards
- Create a diverse sushi menu for Miami concepts including Maple & Ash, Studio, and Eight Bar
- Develop a sushi and nigiri events menu and collaborate with the Events Manager for private dining and off-site events
- Create and implement an off-site sushi event program
- Participate in the Task Force team for new openings to train new team members and implement sushi programs
- Conduct regular research and development to stay current with sushi industry best practices
- Prepare all types of sushi including maki, nigiri, and sashimi, coordinating with waitstaff for proper execution
- Mentor and manage line chefs to build leadership and promote team growth
- Create and implement development plans to foster internal growth and chef success
- Assist in recruiting new talent in the market
