Job Requirements
- Serv-safe certification
- 2-3 years experience as a food production manager or executive steward
- Ability to work evenings, weekends and holidays
- Proficiency in Microsoft Office applications

- Ability to work an event-based schedule including evenings, weekends and holidays
- Proficient in Microsoft Office, Word and Excel
- Must be team oriented with solid communication skills
Job Duties
- Directs, implements and maintains a service and management philosophy which serves as a guide to respective staff
- Assists with the attainment of specific departmental and organizational goals
- Oversees distribution of food from production to service areas
- Maintains relationships with vendors
- Oversees inventory controls and ensures compliance to cleanliness standards
- Ensures catering equipment is transported back to designated areas to be washed, dried and staged for the next event
- Ensures all equipment par levels are stocked and secured in Premiums and Main Production kitchens
- Works directly with Ecolab and Warehouse Manager to establish par levels for cleaning chemicals and sanitizers
- Supervises Distribution team and Stewarding team to ensure compliance to safe work practices to minimize accidents
- Creates monthly staff training modules using the ServSafe model for food safety and sanitation
- Verifies accuracy of stewarding employee time and attendance reports prior to submitting to payroll
- Coordinates with Executive Chef the weekly schedules based on event forecasts
- Creates catering pull sheets based on Banquet Event Orders (BEO)
- Works with Executive Chef and Director of Catering Operations to develop standard operating procedures manual for the Stewarding department
- Helps develop food safety, sanitation and HACCP program in conjunction with Executive Chef, Director of Catering Operations and County Health Department
- Ensures back-of-the-house department’s month-end chemical and cleaning supply inventories are accurately entered and cross-checked
- Coordinates monthly steward employee staff meetings to include food safety, sustainability and sanitation training
- Creates communication vehicle for employee suggestions
- Member of the Safety team to ensure safe operations of the facility
