Job Requirements
- Minimum five years experience as Executive Steward or Stewarding Manager
- Casino experience preferred
- Must have gaming license/registration as required
- Certification in Serv-Safe within 120 days of employment
- Working knowledge of kitchen equipment and cleaning procedures
- Outstanding interpersonal communication skills
- Ability to work under pressure
- Proven sound judgment
- Ability to communicate Material Safety Data Sheets
- Up to date on department policies
- Computer proficiency
- Ability to work flexible shifts including holidays
- Ability to obtain necessary licensing
- Ability to lift up to 40 pounds
- Ability to stand for long periods
- Ability to work in noisy, bright, smoky, and dusty environments
Job Qualifications
- Minimum five years experience as Executive Steward or Stewarding Manager in a multi-venue environment
- Casino experience preferred
- Gaming license/registration as required by jurisdiction
- Certification in Serv-Safe (Food Sanitation Management) within 120 days of employment
- Working knowledge of kitchen equipment and cleaning procedures
- Outstanding interpersonal communication skills
- Ability to work under pressure
- Proven track record demonstrating sound judgment
- Neat, clean, well-groomed appearance
- Ability to understand and communicate Material Safety Data Sheets
- Up to date on departmental policies and procedures
- Computer skills for requisition entry
- Effective communication with team members and guests
- Team player attitude
- Ability to successfully complete pre-employment process
- Flexibility to work shifts, days, and holidays
- Ability to obtain and maintain necessary licensing
Job Duties
- Possesses complete knowledge of all procedures related to the job
- Builds and fosters great relationships between stewarding department and everyone outside the department that they interact with
- Coordinates training of all team members in the proper performance of all job duties and ensures guests are treated promptly, professionally, and courteously
- Supervises all kitchen helpers through the team
- Works with Executive Chef and Assistant Executive Chef to ensure adequate supervision for kitchen workers
- Ensures kitchen workers perform duties as required and in accordance with company guidelines
- Maintains sanitary food preparation and storage areas
- Manages cleanliness of all back of house areas including main kitchen, café kitchen, steakhouse kitchen, storage, dumpster, loading dock, team dining, and ware washing areas
- Oversees general cleaning schedule to meet or exceed health inspection requirements
- Organizes and conducts pre-shift and departmental meetings
- Maintains equipment cleanliness and good operating condition
- Maintains inventories of china, glass, linens, and silver
- Schedules employees according to business levels and budgets
- Maintains daily payroll
- Maintains proper chemical controls and conducts cost analysis
- Manages night cleaning duties
- Handles guest complaints promptly and courteously
- Maintains awareness of safety and accident prevention, ensuring safe work practices
- Ensures thorough communication between shifts and with front of house supervisors
- Communicates problems or concerns to Executive Chef and other departments
- Accessible at all times due to 24-hour responsibility
- Upholds departmental rules, policies and procedures
- Ensures fair and consistent treatment of all team members
- Performs any other duties as assigned by Executive Management
