Job Requirements

  • Minimum 5 years experience as Executive Steward or Stewarding Manager in a multi-venue environment
  • casino experience preferred
  • gaming license or registration as required by jurisdiction
  • certification in Serv-Safe within 120 days of employment
  • must have working knowledge of kitchen equipment and cleaning procedures
  • must possess outstanding interpersonal communication skills
  • ability to work under pressure
  • prior experience with sound judgment required
  • ability to understand and communicate Material Safety Data Sheets
  • must use a computer for requisitions
  • ability to communicate with team members and guests
  • ability to be a team player
  • ability to work flexible shifts including holidays
  • ability to obtain and maintain all necessary licensing
  • must be able to lift up to 40 pounds
  • must be able to work standing for hours
  • ability to use hands and arms effectively

Job Qualifications

Job Duties

  • Possesses complete knowledge of all procedures related to the job
  • builds and fosters great relationships between stewarding department and everyone outside the department that they interact with
  • coordinates training of all team members in proper performance of all job duties and ensures prompt, professional and courteous guest treatment
  • responsible for direct supervision of all kitchen helpers
  • works with Executive Chef and Assistant Executive Chef to ensure adequate supervision for kitchen workers
  • ensures kitchen workers perform duties as required in accordance with company guidelines
  • ensures all food preparation and storage areas are maintained in a sanitary manner
  • maintains general knowledge of all kitchen inventory and ensures appropriate quantity and quality of product is maintained and rotated
  • directs staff in maintaining cleanliness of back of house areas including main kitchen, cafe kitchen, steakhouse kitchen, storage, dumpster, loading dock, team dining room, and ware washing areas
  • manages general cleaning schedule to meet or exceed health inspection requirements
  • organizes and conducts pre-shift and departmental meetings
  • upholds standards with appearance and work ethic
  • maintains equipment cleanliness and good operating conditions
  • maintains inventories and conducts quarterly inventory checks
  • schedules employees according to business levels and budget guidelines
  • maintains daily payroll
  • maintains proper chemical controls and cost analysis
  • manages night cleaning duties
  • handles guest complaints promptly and courteously
  • ensures awareness of safety and accident prevention and completes accident reports as necessary
  • ensures thorough communication between shifts
  • works with front of the house supervisors for proper communication
  • communicates problems or concerns to Executive Chef and other departments
  • is accessible at all times to manage 24-hour responsibilities
  • complies with all departmental rules, policies, and procedures
  • treats all team members fairly and consistently
  • performs other duties as assigned by executive management
