Job Requirements

  • Three years related culinary experience with supervisory experience in a high-volume, upscale casual dining environment
  • Food Safety certified or ability to obtain within 30 days from hire
  • MN CFPM or ability to obtain within 30 days of hire
  • Proficient computer skills necessary to communicate with others, prepare and provide food costing and recipes, analyze financial reports
  • Strong understanding of food cost, purchasing and kitchen equipment operation
  • Ability to move about frequently and operate specific tools and equipment
  • Ability to communicate with guests, employees, owners, and management
  • Ability to travel locally occasionally
  • Specific vision abilities including close vision, color vision, peripheral vision, depth perception, and ability to adjust focus

Job Qualifications

  • Three years related culinary experience with supervisory experience in a high-volume, upscale casual dining environment
  • Proficient computer skills necessary to communicate, prepare and provide food costing and recipes, analyze financial reports
  • Food Safety certified or ability to obtain within 30 days from hire
  • MN CFPM or ability to obtain within 30 days of hire
  • Strong understanding of food cost, purchasing and kitchen equipment operation
  • Degree or graduate from a two-year culinary school with certificate preferred
  • Competency in Craftable and Microsoft Office preferred

Job Duties

  • Assist the Executive Chef and General Manager in planning, developing, and implementing menus
  • Develop recipe cards for menu items to ensure consistency and profitability
  • Prep, cook, bake, and/or direct the preparation of food to ensure quality, portion, and presentation to the approved standards, recipes, and procedures
  • Maintain a visual culinary presence on the floor, visiting with guests and establishing client relationships
  • Work with Executive Chef and General Manager to manage and coordinate hiring, training, and development of kitchen and culinary staff
  • Monitor staff work product including regular inspections ensuring departmental cleanliness and product security
  • Maintain close communication with other managers to ensure adequate staffing, inventory, and production pars are in place
  • Review menus and analyze recipes to determine food, labor, and overhead costs
  • Conduct inventories as required for controls and financial reports
  • Develop and implement department schedules, monitor payroll, and control labor costs through staffing guidelines adjustments
  • Maintain a clean, safe, and sanitary facility by inspecting food quality standards and sanitation regulations
  • Assist in purchasing, preparation, and delivery of all food and non-food items as necessary
  • Review financial transactions and monitor budget to ensure efficient operations and expenditures stay within guidelines
  • Ensure compliance with company, local, state, and national regulations pertaining to food quality, cleanliness, sanitation standards, and safety
