Job Requirements
- Five years or more of leadership experience with a minimum of two years working as a sous chef in fine dining
- Understanding and ability to verbalize fundamentals of cooking
- Proficiency in safe food handling and HACCP/USPH
- Ability to work with a multi-cultural team in a confined environment
- Valid passport and C1/D Seaman's visa
- Complete pre-employment medical
- Obtain a criminal background check
- Bring approved work shoes
- Willingness to live and work onboard Disney Cruise Line vessel
- Willingness to follow safety role and emergency responsibilities
- Willingness to uphold safety management system
- Willingness to share confined cabin and work in a multicultural environment
- Pass drug/alcohol testing
Job Qualifications
- Minimum five years of leadership experience with at least two years as a sous chef in a fine dining establishment
- Proficient in all kitchen stations
- Demonstrated dedication to culinary career with desire to grow within the industry
- Proficient in safe food handling, HACCP and USPH standards
- Knowledge and proficiency in following and converting recipes
- Formal culinary training preferred
- Prior ship experience preferred
Job Duties
- Collaborate with the executive chef to plan and deliver menus
- Ensure every food item leaving the kitchen is of the highest quality in flavor and presentation
- Lead all aspects of the Remy/Enchante culinary team including training and mentoring while inspiring involvement in menu creation
- Oversee inventory and control costs
- Act as a link between the kitchen and customers while connecting with the Maitre d'Hotel and front-of-house team
- Maintain all applicable USPH and HACCP standards in the Remy/Enchante galley
- Be responsible for the Remy/Enchante operation when the executive chef is not available
