Job Requirements

  • Culinary degree or equivalent professional training
  • Minimum 7-10 years of progressive culinary leadership experience in a full-service or luxury hotel, resort, or high-volume restaurant
  • Proven experience managing large teams and multiple outlets
  • Strong knowledge of classic and contemporary cooking techniques
  • Demonstrated success in banquet and high-volume production kitchens
  • Strong financial acumen with experience managing food cost, labor, and inventory
  • Excellent leadership, communication, and organizational skills
  • Experience in a large convention or urban hotel environment
  • ServSafe or equivalent food safety certification
  • Experience working in a union environment
  • Must be able to work a flexible schedule or AM or PM shifts, holidays, and weekends

Job Duties

  • Oversee daily culinary operations across all outlets, in-room dining, banquets, and production kitchens
  • Ensure consistent execution of menus, recipes, portion control, and plating standards
  • Maintain the highest standards of food quality, taste, presentation, and timeliness
  • Act as Executive Chef in their absence and represent culinary leadership in executive and operations meetings
  • Supervise, mentor, and develop sous chefs, chefs de cuisine, and culinary colleagues
  • Support recruitment, onboarding, scheduling, performance management, and succession planning
  • Foster a positive, accountable, and collaborative kitchen culture aligned with Hyatt values
  • Assist in managing food cost, labor cost, inventory, purchasing, and waste control to meet or exceed budgeted targets
  • Analyze P&L statements, labor reports, and productivity metrics
  • implement corrective actions as needed
  • Partner with Finance and Purchasing to maintain strong cost controls and operational efficiencies
  • Lead culinary planning and execution for meetings, conventions, weddings, and large-scale events
  • Ensure flawless execution for high-profile and VIP functions
  • Collaborate with Event Services to customize menus while maintaining quality and efficiency
  • Ensure full compliance with all food safety, sanitation, and hygiene standards (HACCP, local health regulations, Hyatt policies)
  • Maintain clean, organized kitchens and proper equipment usage
  • Partner with Stewarding and Engineering to ensure equipment functionality and cleanliness
