Job Requirements

  • Minimum of 4 years of experience in a related culinary leadership role
  • Experience managing employees in a collective bargaining environment
  • Ability to develop and maintain effective operational processes
  • Strong leadership and team management skills
  • Knowledge of food quality standards and safety regulations
  • Ability to work in a fast-paced, high-volume environment
  • Flexibility to work varied shifts including weekends and holidays

Job Qualifications

  • Bachelor's degree in culinary arts hospitality management or related field preferred
  • Minimum of 4 years of relevant culinary leadership experience preferably in a multi-outlet luxury resort environment
  • Proven ability to lead and manage teams in a collective bargaining environment
  • Strong knowledge of culinary trends food safety standards and operational processes
  • Excellent communication leadership and interpersonal skills
  • Demonstrated ability to manage costs labor and achieve financial goals
  • Experience in menu development and guest satisfaction evaluation

Job Duties

  • Oversee culinary leadership in assigned areas including establishment and achievement of profit objectives and desired standards of food quality culinary execution cleanliness safety and other brand standards
  • Oversee the implementation and execution of policies operating procedures training programs directives menus work schedules rules and regulations for the culinary staff
  • Interview select train supervise counsel and coach room chefs for the efficient operation of their outlets and departments Drive employee engagement through coaching training and development
  • Regularly review and evaluate the degree of customer satisfaction of the individual outlets to recommend and provide feedback on new menu opportunities whenever a change in demand customer dissatisfaction or a change in competitive environment requires such change
  • Utilize resources provided by COEs to manage COGs drive profits manage labor and control expenses
  • Maintain facilities in accordance with MGM Resorts service standards ensuring high customer satisfaction and an exceptional dining experience
  • Collaborate with cross-functional teams to maximize operational efficiency and uphold brand consistency
