Job Requirements

  • Must have three years senior level or executive chef experience
  • Graduation from AOS Culinary School or related training preferred
  • Three plus years related lead chef experience
  • Strong familiarity with OSHA and local Department of Health regulations
  • Excellent communication skills both oral and written
  • Ability to manage multiple tasks and work efficiently under pressure
  • Must be detail oriented and organized
  • Must be passionate about culinary arts with an effective palate
  • Must be able to troubleshoot and solve problems
  • Must speak and communicate effectively in English
  • Ability to stand and walk for prolonged periods
  • Ability to lift up to 40 pounds

Job Qualifications

  • Graduation from AOS Culinary School or related training, degree in Culinary Arts preferred
  • Three years senior level or executive chef experience in a high-quality, volume-oriented environment
  • Three or more years related lead chef experience
  • Strong familiarity with OSHA and all local Department of Health Regulations
  • Excellent oral and written communication skills
  • Ability to handle multiple tasks and work well under time constraints
  • Detail-oriented with good organizational skills
  • Passionate culinarian with effective palate and presentation sense
  • Ability to troubleshoot effectively
  • Must be able to communicate clearly and effectively in English

Job Duties

  • Work with executive chef and sous chef to develop and conduct biannual training seminars for event chefs, cooks and kitchen helpers including standard operating procedures, sanitation and food handling, menu standards, presentation, buffet/station set-up and BOH event set-up
  • Work with executive chef and executive sous chefs to instill company culture, build morale and create an ongoing positive work environment
  • Develop, train and mentor culinary team
  • Recommend or conduct disciplinary action including termination of culinary team when necessary
  • Attend and participate in culinary job/career fairs
  • Accountable for meeting budgets for food, labor and direct operating expenses as they pertain to the culinary department
  • Develop and maintain party portioning reports to ensure proper portioning of food at future events
  • Assist executive chef with weekly kitchen labor schedules meeting staffing criteria and budget
  • Work with off-premise culinary team to monitor event execution procedures to ensure quality, consistency, efficiency, productivity and professionalism
  • Conduct hands-on teaching and training in kitchen and at events
  • Train and educate staff on new menu items and procedure changes
  • Review menu weekly with event chefs and develop party plans for each event
  • Edit menus for portioning, design and details
  • Assist executive chef in maintenance of kitchen administrative flow and special projects
