Job Requirements
- High school diploma or equivalent required
- Prior experience as an executive chef or related experience in a full-service restaurant or events venue required
- Experience in volume feeding, a la carte, fine dining, catering, baking and pastry, purchasing storage and handling required
- Must acquire and maintain a valid Gila River Environmental Health Food Handlers Card
- Must acquire and maintain Alcohol Awareness Certification
- Must acquire and maintain Blood-Borne Pathogens (BBP) training
- Ability to perform the GILA WAY: greet guests, interact positively, listen actively, appreciate guests
- Excellent guest service skills and strong telephone etiquette
- Self-starter with ability to follow up and complete tasks with minimal supervision
- Ability to establish and maintain effective working relationships
- Strong interpersonal and communication skills, both written and oral
- Must have knowledge or ability to acquire knowledge within one year of Enterprise Policies, governmental regulations, and technical rules
- Must pass pre-employment alcohol/drug test and background check
- No felonies, warrants, outstanding tickets, shoplifting or theft convictions
Job Qualifications
- High school diploma or equivalent
- Bachelor’s degree with major concentration in food service preparation, management, nutrition or related field preferred
- Prior experience as an executive chef and/or related experience in a full-service restaurant or events venue
- Experience levels in volume feeding, a la carte, fine dining, catering, baking and pastry, purchasing storage and handling
- Must acquire and maintain a valid Gila River Environmental Health Food Handlers Card, Alcohol Awareness Certification, Blood-Borne Pathogens (BBP) and other required compliance trainings
- Ability to perform the GILA WAY: Greet our guest, Interact positively with our guest, Listen actively to our guest, Appreciate our guest
- Excellent guest service skills, strong telephone etiquette, and being a self-starter with the ability to follow-up and complete tasks in a timely manner with minimum supervision
- Ability to establish and maintain effective working relationships and gain the cooperation of guests and team members
- Strong interpersonal and communication skills, both written and oral
- Knowledge and thorough understanding of Enterprise Policies and Procedures, governmental regulations, and technical rules relevant to responsibilities or ability to acquire within one year
Job Duties
- Promotes and provides excellent guest service experiences to both internal and external guests
- Ensures budgeted food percentages are achieved through effective control measures including portion controls, kitchen timings, food inventory rotation measures, receiving and food storage procedures, inventory controls, effective purchasing procedures, kitchen security procedures and waste control
- Controls labor costs through effective scheduling of kitchen staff, cross-training and development of team members
- Provides accurate costing on all menu items for all food areas
- Meet with suppliers to keep abreast of changes taking place in the market
- Prepares necessary data for budgeting
- projects annual food, labor, and other costs and monitors actual financial results, and takes corrective action as necessary to ensure that financial goals are met
- Performs other duties as assigned
