Job Requirements

  • High school diploma or equivalent
  • Minimum five years of related culinary experience including leadership roles
  • Proven experience in banquet culinary operations
  • Ability to work flexible hours including weekends and holidays
  • Strong organizational and time management skills
  • Physical ability to stand for long periods and handle kitchen duties
  • Valid food handler certification or equivalent

Job Qualifications

  • Five years of experience as an executive sous chef or sous chef
  • Experience with banquet culinary in a hotel kitchen or catering company
  • Strong leadership and team management skills
  • Knowledge of food cost control methods
  • Ability to create and modify menus
  • Familiarity with food hygiene and health and safety standards
  • Excellent communication and interpersonal skills

Job Duties

  • Menu creation/modifications
  • Manage and train the kitchen brigade effectively to ensure a well-organized and motivated team
  • Ensure consistency in quality of dishes at all times
  • Ensure resources meet business needs through effective management of ordering/inventory
  • Support brand standards through the training and assessment of your team
  • Manage food cost controls to contribute to Food and Beverage revenue
  • Knowledge of activities in other departments and implications
  • Ensure compliance with food hygiene and health and safety standards
