Job Requirements
- Degree or certification from an accredited culinary program preferred
- 3 years' experience in a managerial position of an upscale and/or high-volume foodservice establishment required
- ability to work varied schedules including weekends and holidays
- capability to stand for extended periods and perform physical tasks such as walking, pushing, lifting up to 50 pounds, bending, reaching, stooping, kneeling, or crouching
- ability to work in extreme temperatures including freezers and kitchens
- adherence to safety protocols including MSDS and OSHA standards
- strong organizational and multitasking abilities

Job Duties
- Support and assist the Executive Chef in daily kitchen operations
- interview, select, train, schedule, coach and support culinary and stewarding staff
- oversee and direct food production efficiently and timely
- collaborate with others to develop new menu items and create and test recipes
- ensure food products are consistently prepared and served according to recipes, portioning, cooking, and serving standards
- manage and hold staff accountable for food safety, food handling, and sanitation requirements
- train, develop, and evaluate staff on kitchen equipment use, cooking methods, garnishes, and portion sizing
- supervise the stewarding operation
- maintain kitchen cleanliness and standards by personal inspection and follow kitchen preventative maintenance
- manage kitchen inventories including food, beverage, glass, china, supplies, chemicals, equipment, and tools
- attend and participate in daily and regular meetings
- conduct divisional and departmental staff meetings
- follow sustainability guidelines related to the EarthView program
- practice safe work habits and comply with MSDS and OSHA standards
- perform other duties as requested by management
