Job Requirements

  • Culinary Arts degree or certification or equivalent experience
  • five to seven years related experience in high volume banquet and fine dining food and beverage facility
  • experience supervising and training staff
  • knowledge of current fine dining trends
  • ServSafe Food Handler certification
  • leadership and problem-solving skills
  • excellent communication skills
  • proficient in computerized menu management systems
  • ability to lift up to 50 pounds
  • ability to stand, sit, walk, reach, stoop, kneel, crouch for extended periods
  • availability to work flexible hours including weekends, overtime, and holidays

Job Qualifications

  • Culinary Arts degree or certification from recognized institution or equivalent experience
  • five to seven years experience in high volume banquet and fine dining facility
  • proven ability to supervise and train diverse team
  • in-depth knowledge of fine dining trends and food preparation
  • ServSafe Food Handler certification
  • excellent verbal and written communication skills
  • outstanding leadership, management, and problem-solving abilities
  • experience controlling costs and managing food budgets over $2 million
  • experience with computerized menu management and relevant software
  • ability to lift 50 pounds and work physically demanding hours
  • ability to work flexible hours including weekends and holidays

Job Duties

  • Hires, manages, schedules, assigns, trains, disciplines, and monitors kitchen staff involved in a la carte operations
  • participates in food preparation as needed
  • trains employees in new cooking methods and fine dining techniques
  • coordinates kitchen activities with other supervisors and managers
  • evaluates quality of raw and finished food products focusing on presentation
  • maintains sanitation and safety standards
  • assists in menu and meal planning and controls food costs
  • develops seasonal, holiday, and special menus and daily specials
  • monitors and coordinates food and supply orders
  • works with Purchasing Department to manage merchandise procurement
  • monitors staffing to meet labor cost objectives
  • inspects equipment and coordinates with stewarding staff on maintenance and sanitation
  • represents The Athenaeum publicly and responds to member and guest inquiries
  • attends daily line-up and other required meetings
  • maintains sanitation procedures meeting OSHA and health regulations
  • performs other duties as assigned
  • schedules all kitchen staff weekly
