Job Requirements

  • high school diploma or equivalent
  • minimum of two years experience in kitchen management or as a sous chef
  • strong leadership and communication skills
  • knowledge of local health department sanitation laws
  • ability to work flexible hours including weekends and holidays
  • ability to multitask and prioritize tasks
  • able to maintain professional appearance and comply with company grooming standards

Job Qualifications

Job Duties

  • work with other food and beverage managers and keep them informed of food and beverage issues as they arise
  • keep immediate supervisor fully informed of all problems or matters requiring attention
  • conduct daily walk-thru inspections of buffet lines, cook lines, refrigerators, walk-in refrigerators, freezers and dry storeroom
  • coordinate and monitor all phases of loss prevention in kitchen areas
  • prepare and submit required reports in a timely manner
  • monitor quality of all food products and presentation
  • oversee all aspects of daily kitchen and food production operations including hot food from main kitchen and bakery and cold food from pantry
  • make cooks aware of daily forecasts and customer counts to ensure timely service of both hot and cold food
  • respond to guest complaints promptly
  • ensure compliance with standard operating procedures in all outlets
  • ensure compliance with requisition procedures
  • attend all required meetings
  • understand, implement and monitor corporate promotions including buffet and three-meal concept standards
  • know and enforce all local health department sanitation laws
  • work with director of food and beverage to create and implement menus
  • design and oversee cafeteria rotating menu and operations
  • assess food portion size, visual appeal, taste, and temperature of items served
  • check all stations at end of every shift for proper food storage and sanitation
  • check food purchases for correct ordering, quality, and pricing
  • oversee daily activities including food preparation, sanitation, receiving daily inventories, maintenance of log-on report and food cost report
  • prepare daily food production sheets
  • cut meat, poultry, and seafood according to daily business
  • maintain warm and friendly demeanor at all times
  • communicate effectively verbally and in writing with all levels of employees and guests
  • listen to and address concerns raised by employees and guests
  • multitask and prioritize departmental functions to meet deadlines
  • attend all hotel required meetings and training
  • maintain regular attendance as required by scheduling
  • uphold high standards of personal appearance and grooming including wearing nametag
  • comply with Highgate Hotel standards and regulations to promote safe and efficient operations
  • maximize productivity, identify problem areas and assist in implementing solutions
  • handle problems effectively including anticipating, preventing, identifying and solving problems
  • understand and evaluate complex information and data to meet objectives
  • maintain confidentiality of information
  • perform other duties as requested by management
